Menu....Tuesday?

I know, I know, I'm a day behind everyone and their way-catchier "Menu Monday".  But in this "cop house" today is like Skip's Sunday, so I'm only just getting organized now. I'll be honest.  I don't really meal plan much.  It's just hard for me to get into the grove since Skip works nights every other week.  I'll get motivated and then lose it as fast as it comes.  I've become the queen of just throwing random stuff in the shopping cart and hoping I can make a meal out of it all when I get home. However, I'm making a real effort now to not only save money, but also eat much better.  And meal planning is at the forefront of achieving those two things. So here I am ready to take on the week.  I've got my list and coupons ready to go, and I know exactly what we're making each night.  Hoping this helps cut back on the take-out we've been a little too relaxed with recently!! I got pretty much every recipe from Pinterest.  I...

Menu Planning

One of the things I have been trying to improve on as a wife and mom recently is meal planning.  It's hard for me to get into a regular routine with it, since Skip is only home for dinner like every other week.  I'm way more casual about what Little M and I eat on nights it's just the two of us, but I want to get better about us all sitting down and eating a good meal together when Skip is home.  So last week I really buckled down and managed to make a nice meal every single night!  And my new obsession love of Pinterest definitely helped to inspire me.  So here's what we had {and honestly, I'm just feeling too lay to post all the recipes, but feel free to leave me a comment and I'll email you one if you want} Tuesday: Mediterranean chicken wraps Wednesday: Sausage and peppers Thursday: Pasta with marinara sauce and leftover sausage Friday: Buffalo chicken wraps Saturday: Cheddar chicken and garlic risotto Sunday: Crock pot mac and cheese So what have you been ...

Menu Monday {on Saturday}

After I got married I developed a love of cooking. I don't really get to do it that much because one, I am like the *pickiest* eater in the world and I have trouble finding recipes I'll actually eat, and two, Skip's schedule is such that he is only home for dinner every other week. It's nice that I don't always have to cook a big dinner, but I also get lazy and don't want to make a whole dinner for myself. But this year I would like to start cooking more regularly and expand my recipes. It also helps that Little M is eating regular food so I want to be cooking good meals for her! I'm going to start out slow and just make planned menus for the weeks that Skip will be home with us for dinner, and just wing it while he's working. Just taking it one step at a time. So here's my menu for the week! Sunday: Ordering pizza while watching playoffs! Monday: Homemade chicken fajitas with rice Tuesday: Tomato-Sausage Lasagna Wednesday: Leftovers Thursday:...
