Stumbled Upon a Treat

I know, I know, I'm on vacation and I shouldn't be blogging. But I managed to hook up the Internet here, and I just couldn't stay away all week! Besides Little M is taking a nap and Skip went out for a run, so I've got some time to myself.

The other day I was flipping through one of the cookbooks my mom has down here, looking for a possible new recipe to make for dinner. The cookbook is called 'Goodness Gracious: Recipes for Good Food and Gracious Living' by Roxie Kelley. And way in the back I found this recipe and just *had* to share it with you. Mainly because it just sounds like the most delicious dessert ever!

Peanut Butter Cup Cookies
2 1/4 cups of flour
1/3 cup of cocoa
1 teaspoon of baking soda
1/2 teaspoon of salt
1 cup butter
3/4 cup smooth peanut butter
3/4 cup packed brown sugar
3/4 granulated sugar
1 teaspoon of vanilla
2 eggs
10 ounces peanut butter cups, coarsely chopped
1 cup {6 ounces} semi sweet chocolate chips

Preheat the oven to 350*. Combine the flour, cocoa, baking soda, and salt. In a large bowl, beat the butter, peanut butter, sugars, and vanilla until light and fluffy. Add the eggs, one at a time, beating well after each addition until thoroughly blended. Stir in the dry ingredients until smooth. Fold in the peanut butter cups and chocolate chips. Spoon 2 tablespoons onto an ungreased baking sheet. Bake until slightly firm to the touch, but not brown, 10-13 minutes. Cool for a few minutes before transferring from baking sheet to wire rack to cool completely. Makes about 3 dozen.


Let me know if any of you try it out and how it comes out. I think I'll make it once I go home so I can share it with other and Skip and I won't just eat the whole batch ourselves!

  2. They sound wonderful but unfortunately I'm on a diet, so I will have to wait until I'm pregnant to try them...hopefully in two weeks!
