Delicious Spaghetti Squash from the girl who hates vegetables
I made a resolution to start eating better this year, because let's face my...my eating habits resemble that of a 10 year old boys dream. Having cereal for dinner every once in a while is not going to give me all the nutrients I need.
And while I fell off the healthy eating wagon the past month or so, I decided to jump right back into it. And as I've been seeing recipe after recipe for spaghetti squash recently, I figured I'd start with that!
Delicious Spaghetti Squash with Sausage {from the girl who hates vegetables}
What you will need:
- one spaghetti squash {this was enough for my husband and I. Would get at least two if serving the whole family
- one jar of marinara sauce {could make your own obviously, I was just feeling lazy}
- one package of sausage {I prefer hot to sweet, but that's your own preference!} You could also buy seafood online and use that instead
Directions:
- Heat over to 375*
- Pierce spaghetti squash a few times with either a fork or knife,
- Place on a cookie sheet and bake for an hour
-There are many ways to cook sausage. I pierce mine, and cook it in the skillet in just a little bit of oil. Once most of it is cooked through, I slice it into chunks and throw it back in the skillet just a little longer. Set aside.
- When the squash comes out of the oven, let it cool a little. Then slice in half and remove the seeds.
- Using a fork, scrape out the insides.
- I then added it back into the skillet I had cooked the sausage in.
- Add the sausage back in, and pour one jar of marinara sauce over top.
- Mix together and heat until warm.
- Enjoy!!
Now like I said, I do not enjoy eating vegetables. But this was so delicious. My husband and I both agreed to add this into our regular meal rotation! And it really was so easy to do.
So what's your favorite way to prepare spaghetti squash? I wonder if anyone has ever added lobster to it. You could buy lobster online as well.
