Menu....Tuesday?

I know, I know, I'm a day behind everyone and their way-catchier "Menu Monday".  But in this "cop house" today is like Skip's Sunday, so I'm only just getting organized now.

I'll be honest.  I don't really meal plan much.  It's just hard for me to get into the grove since Skip works nights every other week.  I'll get motivated and then lose it as fast as it comes.  I've become the queen of just throwing random stuff in the shopping cart and hoping I can make a meal out of it all when I get home.

However, I'm making a real effort now to not only save money, but also eat much better.  And meal planning is at the forefront of achieving those two things.

So here I am ready to take on the week.  I've got my list and coupons ready to go, and I know exactly what we're making each night.  Hoping this helps cut back on the take-out we've been a little too relaxed with recently!!

I got pretty much every recipe from Pinterest.  I love how much easier it is to scroll around, than flip through hundreds of cookbooks like I used to.  A few of these are tried and true favorites, and a few are new.  Hopefully the new ones are as good as I hope!

 Here are links to the recipes in case you want to make some this week!

Baked Spaghetti Squash and Cheese {I'm a big fan of spaghetti squash, but I've never tried it this way before}

Spicy Sausage Pasta {this is one of my most favorite recipes.  I could seriously eat it four nights a week}

Cinnamon French Toast Bake {Skip requested breakfast for dinner one night.  And this is my favorite thing to make for holiday brunches.  We haven't had it in so long, so I just had to include it!

Chicken Ranch Pasta {I haven't tried this yet, but anything with chicken and bacon has to be good}

Pasta with Tomato Cream Sauce {another I haven't tried yet, but it looks super simple to make while watching the Giants game on Sunday!}

There is definitely a lot of pasta going on this week.  Mainly because the weather is starting to get super cold and pasta is one of my go-to comfort foods.  Plus it's cheap, easy, and you can throw anything together with it!  As you can tell gluten-free and paleo I am not.

Where do you get ideas for meal planning?  Do you plan out lunches as well, because I am struggling with that too.  What are your favorite go-to recipes I could add into our rotation?
